El Martillo is a coffee farm in El Salvador run by Andrés Salaverría. It's part of a group of farms run by the Salaverría family who we've purchased from before (our Las Cruces Natural is also from them). 

They have been working consistently for years to improve the quality of their coffees, and are now at a level where they can reliably produce high-scoring naturals which is rare for El Salvador. In addition to traditional methods, Andrés is interested in how new processing methods and techniques can push the quality of coffee.

This coffee has been processed as an anaerobic natural, giving it intense acidity and tropical fruit notes.

Suggested brewing recipe:

This is a funky and intensely fruity coffee. We prefer to brew this with a brewing method that gives a fast extraction, like a V60 or Orea brewer.

• 14g of medium ground coffee for 200g of 92 degree water.
• 50g bloom for 30 seconds
• First pour up to 100g
• Second pour up to 150g
• Third pour up to 200g
• Target brew time 2:30 minutes
