San Felipe is the name of a farm in El Salvador owned by the Salaverria family. It is run by father Jose Antonio and his sons Andres and Jose junior. They are the 6th generation of coffee farmers in their family, and their passion for quality coffee is high. Finca San Felipe is in fact their best performing farm. It is planted with mostly Bourbon varietals and is located at a high altitude by El Salvadoran standards with rich volcanic soil from the Santa Ana volcano.

The process used for this lot is an anaerobic natural fermentation, which gives it a candy-like fruity flavour.

This is a fermented and intense coffee. Best with a fast brewing method that promotes clarity, like the V60 or April Brewer.

• 16g of medium ground coffee for 240g of 92 degree water
• 40g bloom for 30 seconds
• First pour up to 120g
• Second pour up to 180g
• Third pour up to 240g
