El Martillo was one of our Christmas Coffees for 2023, and when a customer said it was one of the best coffees he'd ever tasted and asked where he could find something like this for espresso, we had to try it! We roasted up our last batch for espresso, to satisfy our curiosity and offer something unique to all the home baristas out there. The result was a fruit-bomb that will surprise you.

El Martillo is a coffee farm in El Salvador run by Andrés Salaverría. It's part of a group of farms run by the Salaverría family who we've purchased from before (our Las Cruces Natural is also from them).

This coffee has been processed as an anaerobic natural, giving it intense acidity and tropical fruit notes.

As espresso it is intensely fruity, intensely acidic and very funky!

Region: Apaneca Ilamatepeque, Santa Ana

Cultivar: Bourbon and Hybrido San Francisco

Altitude: 1650-1700 masl

Process: Anaerobic Natural

Cupping score: 86.5

#1 Clean your brewing equipment!

#2 Use a scale or something to measure with!

Suggested brewing recipe:

This is a funky and intense espresso with a high acidity and fruitness. It works best with a finer grind and longer brew ratio of 1 parts coffee dose in to 2.5 parts espresso yield out.

• Brew recipe: 18g dose (in an 18g basket) and 45g yield
• Brew time: 28-30 seconds
