This is an organic coffee grown in protected forests in the Guji area of Ethiopia. Near the village of Hambela Wamena is the washing station Gotae Sodu. Since the dense forests around the station are protected, the smallholder farmers act more as stewards of the wild-growing coffee trees than active farmers. During harvest season the individual farmers pick their trees and deliver cherries to Gotae Sodu, where they are depulped and fermented in water for 24 to 60 hours. The coffee is then washed and soaked for 5 hours before being placed on raised drying beds. The coffee is dried for 12 days and raked to ensure even drying.
We love coffee from Guji and this lot is a perfect example of why. The area is located quite high above sea level, has great growing conditions for coffee and a high genetic diversity of coffee plants, yielding some amazing flavours.
