Carlos is a third generation coffee farmer who owns two farms. This lot comes from the Casa Negra farm which is located in the region of Armenia in Colombia. Carlos is a trained gardner and he cares a lot about restoring the natural soil on his farms. He's planted trees and flowers that are native to the rich, volcanic soil, and restores important nutrients that benefits the coffee trees. The coffee is picked after strong quality requirements like ripeness and size, and the coffee is sorted by hand and floated for defects. After picking the coffe is wet fermented for 30 hours before the pulp is removed. The coffee is then washed and dried on raised beds in drying houses.
