Our high-end christmas coffee comes from the farm Finca El Mirador in the Huila region of Colombia. Producer Alonso Bustos is a second-generation coffee farmer and at El Mirador he decided to start focusing on specialty coffee in 2017. He was inspired by his children to make the transition, and amongst other changes he began planting more exotic varietals like Gesha and Tabi.

Tabi is a cross between Typica, Bourbon and Timor. It has good resistance to diseases and thrives at higher altitudes, making it a perfect varietal for the hills of Colombia. The name comes from the word "good" in the dialect of a local native tribe.

Alonso wants people to know the time and care he puts into his coffee, and that good coffee is a result of conscious effort. If he has his way, he'll be at his farm for the rest of his life, improving his coffee a little bit every day.

Suggested brewing recipe:

This is a funky and intensely fruity coffee. We prefer to brew this with a brewing method that gives a fast drawdown and high extraction, like a V60 or Orea brewer.

• 18g of medium ground coffee for 300g of 94 degree water.
• 50g bloom for 30 seconds
• First pour up to 120g
• Second pour up to 200g
• Third pour up to 250g
• Fourth pour up to 300g
• Target brew time 3:30 minutes
