Moises Chaguala is the name of the farmer who runs Finca El Recuerdo where he lives with his family. They're focused on producing microlots and specialty coffee, and have been doing so successfully since 2013. This lot is a washed Rosado, also known as Pink Bourbon. It's a peculiar varietal for a number of reasons. It's more orange than pink in colour, and it's not a Bourbon varietal either. It's genetically related to Ethiopian landraces (also known as Heirloom) and has a higher glucose content which lends to more body in the final cup. Also, similar to another Ethiopian-descended varietal, the gesha, it can often have complex floral notes.
One thing's for sure, Rosado is a fun varietal which we look forward to exploring the potential of.
