Capucas from Honduras is a certified organic coffee we've had before, but this time we decided to keep it exclusively for espresso. It's a well-rounded coffee with notes of chocolate, baked plum and baking spices. As an espresso it can be enjoyed as-is but it's best when paired with full fat milk. Think milk chocolate with fruit and nuts and a little bit of spice.

The coffee comes from Las Capucas in the Copán region of Honduras. The cooperative COCAFCAL which is short for Cooperativa Cafetalera Capucas Limitada was founded by Omar Rodríguez Interiano in 1999 to share knowledge and help smaller farmers with marketing their coffees. Today they have 950 member located in 16 different communities in Copán, which each member around 1-10 hectares in size.
