Christmas Coffee • Chelbesa • Ethiopia
The washing station Chelbesa is located at 2200 metres above sea level which gives a stable climate for drying coffee, and they have ample capacity with 150 drying beds. They receive coffee cherries from farmers in the area, which are hand-sorted and depulped before being placed in fermentation tanks for up to 72 hours. The mucilage layer is then washed away before the coffee beans are placed on raised beds to dry for 10-15 days.
In order to produce high quality coffee a washing station needs good routines and good infrastructure. Chelbesa has both, which allows them to get the most out of the coffees they receive, showcasing the amazing potential of the Gedeb region.
