Run by owner Diego Guardia, Hacienda Sonora is an example of sustainable large-scale coffee cultivation. All the coffees grown on the farm are processed either as naturals or honeys to reduce waste water. The entire operation is run on renewable energy powered by a hydroelectric generator. About 35% of the farm is dedicated as a wild forest reserve, and 20% is used to grow sugarcane. Hacienda Sonora also invests in the local community and pays its workers a fair wage, allowing them to retain skilled workers year after year.
All of this comes together to create a wonderfully complex and sweet natural.
